How to Build a Biltong Box at Home (Plans + Materials)

A biltong box is the single best investment a home biltong maker can make. It costs less than a decent kitchen mixer, takes a Saturday afternoon to build, and turns biltong from a sometimes-thing into an all-year-round thing. Coastal humidity stops being a problem. Cold winter nights stop being a problem. You take the meat out when it is ready, not when the weather decides.
This guide is everything you need to build one yourself. Dimensions, materials, components, step by step. It is the same design we use in our own workshop test kitchen and recommend to customers.

Why a box matters
Biltong dries because moisture moves from the meat into the air around it. That movement only happens when three things are right. The air is warmer and drier than the surface of the meat. The air keeps moving so it does not become saturated. The temperature stays low enough that the meat does not cook.
In Highveld winter, the climate gives you all three for free. Everywhere else and every other time of year, you need a small machine to do it. That is a biltong box.
The principles
A biltong box is not a complicated machine. The whole device is just four parts.
- An enclosed cabinet that protects the meat from flies, dust, and pets.
- A heat source, usually a 40 watt incandescent globe, that raises the temperature 5 to 10 degrees above ambient.
- A fan that moves the warm air through the meat and out of the box.
- Hooks or a rod at the top to hang strips from.
That is it. Anything fancier is optional. Many boxes that have run for 40 years are exactly this and nothing more.
Dimensions
The size of the box depends on how much biltong you make at a time. A useful rule of thumb is that each kilogramme of fresh meat needs about 5 litres of box volume to dry well. That gives the strips room to hang without touching and gives the airflow room to circulate.

The standard size suits most South African households. The large size is for hunters processing a whole game animal in one go.
Materials
You have three sensible options.
Plywood
The most common DIY choice. 12 mm marine grade plywood for the sides, top, and bottom. 15 mm for the back, which carries the weight of the door and hinges. Cheap, easy to cut, easy to assemble. Disadvantage is that wood absorbs spice and meat odour over time and needs occasional resealing.
Melamine board
Pre-sealed white melamine on chipboard. Much easier to clean than raw plywood. Smarter looking. Slightly more expensive. The downside is that you cannot really seal the cut edges, so the box will eventually swell where edges meet moisture.
Plastic or stainless steel
The premium option. A repurposed plastic storage cabinet or a custom stainless steel box. Easiest to keep hygienic, longest lasting, and what we use in our workshop. Most expensive. For most home users, plywood is the better starting point.
Components
The globe
A 40 watt incandescent globe in a ceramic holder near the bottom of the box. The heat rises through the meat naturally. Higher wattages cook the meat. LED and CFL bulbs give the wrong heat output and should not be used.
Incandescent globes have become harder to find. Look in hardware stores, lighting specialists, or buy a few when you see them.
The fan
A computer case fan (80 to 120 mm) at the top of the box, blowing air out. Power it from a USB plug or a small 12 V DC adapter. The fan creates a gentle updraft that pulls fresh air in through bottom vents and pushes humid air out the top.
Run the fan continuously while the box is in use. The total power draw is around 2 watts. Negligible on your electricity bill.
Vents
Four to six holes of 20 to 30 mm diameter near the bottom of the box, covered with fine mesh to keep flies out. The vents let the fan draw in fresh, dry air to replace the humid air it expels.
Hanging rod or hooks
A 10 mm stainless steel rod across the top of the box, about 10 cm below the fan. Use S-hooks or stainless steel paper clips to hang strips from the rod. Stainless steel only. Plain steel or zinc plated wire will rust and stain the meat.
Drip tray
A removable tray at the bottom of the box catches the few drops of moisture that fall during the first 24 hours. Wipe clean between batches.
Step by step build
For a standard 60 x 60 x 90 cm box in plywood. Allow about 4 hours including paint and curing time.
- Cut the panels. Two 60 x 90 cm sides. One 60 x 90 cm back. One 60 x 60 cm top. One 60 x 60 cm bottom. One 60 x 90 cm door. Most hardware stores will cut from a single 1220 x 2440 mm sheet for a small fee.
- Drill ventilation. Six 25 mm holes evenly spaced near the bottom of the back panel, and one 80 mm hole near the top centre for the fan.
- Assemble the carcass. Screw the sides, back, and bottom together using 30 mm wood screws and waterproof PVA glue. Reinforce corners with right-angle brackets if you want extra rigidity.
- Fit the top. Screw the top panel down to the sides and back, making sure the front edge is flush so the door closes neatly.
- Mount the globe holder. Centre a ceramic light fitting on the back panel, about 10 cm from the bottom. Wire it through a small 1 metre extension cord with an inline switch. Test before sealing.
- Mount the fan. Screw the case fan over the 80 mm hole on the inside of the back panel, blowing outwards. Wire it to a USB plug or 12 V adapter.
- Mount the hanging rod. Drill 12 mm holes in each side panel about 10 cm below the fan. Push a 600 mm long, 10 mm stainless steel rod through.
- Cover the vents. Glue or staple fine stainless steel or aluminium mesh over the vent holes from the inside.
- Hang the door. Two hinges on one side, a small magnetic catch on the other. A handle on the front. Easy access matters because you will check the meat every day.
- Seal and finish. A coat or two of food safe acrylic varnish on the inside and outside. Let cure for 48 hours with the door open before first use.
- Wipe and run a test batch. Run the box empty for 2 hours to check the temperature. The interior should sit at 22 to 25 degrees Celsius with the globe on and the fan running.
Operating the box
- Hang spiced strips so they do not touch each other or the walls.
- Run both the globe and the fan continuously until the biltong is ready.
- Check the temperature with a small thermometer hanging inside the box. Above 30 degrees Celsius, switch off the globe for an hour to cool the box.
- Wipe down with a damp cloth after every batch.
- Once a year, sand and reseal any flaking varnish.
Common mistakes
Too small
A box that is too tight does not circulate air. If you can barely fit your hand between strips, the box is overpacked and the meat will go mouldy where strips touch.
No fan
A box without a fan works on convection alone, which is too slow in humid weather. Spend the R200 on a computer fan. It is the difference between drying and not drying.
Wrong globe
LED globes give the wrong heat output (almost none). CFL globes are inefficient as heaters and have UV issues. Use an incandescent or, in a pinch, a small heating element kept well away from the meat.
No vents
Without ventilation, the air inside the box gets saturated and the meat stops drying. The fan needs somewhere to pull fresh air in.
FAQ
How much does a homemade biltong box cost?
For a standard 60 x 60 x 90 cm box, materials run about R800 to R1200 depending on the wood and components. Less if you scavenge a fan and globe from spares around the house.
How long does a biltong box last?
A plywood box with proper sealing and maintenance lasts 10 to 15 years. Stainless steel boxes last indefinitely.
Can I use a fridge as a biltong box?
Not really. Fridges run at 4 degrees Celsius, which is too cold for drying. A second-hand fridge with the compressor removed and a globe added can work, but the build effort is roughly the same as a wooden box.
Should the fan blow in or out?
Out. The fan pulls humid air out of the top and draws fresh air in through the bottom vents. This creates the gentle vertical airflow biltong needs.
What temperature should the box run at?
22 to 25 degrees Celsius. Higher than 30 starts to cook the meat. Lower than 20 slows the drying down so much that you risk mould.
Does the door need a seal?
No. A snug fit is enough. You actually want a small amount of air leakage to encourage circulation.
